Preparation
  • Cut the vegetables in cubes.
  • Chop the onion finely.
  • In a pan heat the oil and splutter the mustard seeds.
  • Add chilies and fry for a minute.
  • Add potato, chilly powder and garam masala and fry for some time.
  • Keep the flame low and cook the potato.
  • When the potato is almost done add the eggplant and salt and cook for 5-10 minutes.
